I smoked the last of my frozen kokanee this week, and everybody that has tried it says it came out perfect.

2 cups water
2 cups orange juice
3 cups brown sugar
2 cups kikkoman teriyaki
1.5 cups of pickling salt
2 tbsp garlic powder
2 tbsp lemon pepper

I use apple wood smoke.
Jetboats, helping guys like me meet chicks since, well you get the point..

That sounds like a damn good brine, I will definately try that one. I saw quite a few people trolling on Lucky Peak, so they must be catching some Koke's already?

how many hours in the brine? how many lbs. did that work for? wasnt too salty with 1 1/2 cups?

sounds like a damn good brine, its already copied down. i think i'll try with 1 cup salt though. cant wait for the kokes!! hopefully the peak will produce some more toads this year and deadwood will produce the numbers again!

that brine was enough for 15 fish, average of 14" with heads on. I brined them with heads and tails cut off though.

I think I had them skin on and not filleted for 10 hours in brine, then let air dry over night on the racks, then were in the smoker about 6.

I was told there were some being caught near the buoys below Arrowrock, but have not been yet to confirm that.

never even thought about trying for them this time of year. ive got to get my fix of crappie first. thanks for the added info. i always smoke em whole, with the skin on. i flake the meat off anyway and vacuum seal. i think they come out better that way.

anyone ever use honey in the smoking process? i was thinking of trying it on my next batch. thought about applying a thin glaze layer when drying, after the smoke. not sure when a good time would be? right after smoke? halfway done? towards the end?

any thoughts?

I have used Honey and also Golden Syrup and Maple ... But i dont use a brine, I just dry and apply the syrup and salt then smoke...

honey might be a good idea, maybe I'll have to try that. I did another batch for a friend today, came out perfect.

out on lucky peak sat. to run the boat, and it looked a bit like summertime in the narrows. about 8-10 boats out there...all with downriggers out. stopped and chatted with one guy who said they were picking up a few....nothing with size though. i think i'll still wait a bit. hell of a nice morning on the water though! damn near had to back the whole truck in to launch.
